Tuesdays are for Tacos

Shrimp tacos, to be specific.

If your house is like ours, Tuesday taco night is a time-honored tradition. Everyone loves tacos, and almost no meal is as easy to throw together. Want to make it even easier and more memorable? Make them with shrimp.

Shrimp is a super easy, super versatile, super healthy protein that works wonderfully in tacos. Substitute them into your favorite taco recipe or try this delicious Fiesta Shrimp Taco Recipe

Fiesta Shrimp Tacos

These fun, flavorful tacos are a perfect way to serve your family something new this week that everyone will love. 

Ingredients
  • 1 18 oz package SeaPak® Popcorn Shrimp, baked per package instructions
  • 10 warm flour tortillas
  •  14 oz coleslaw mix (no dressing)
  • 8 oz shredded white cheddar cheese
  • 1 large diced tomato
  • 1 avocado, sliced and diced
  • 2 cans sliced black olives, drained
  • Lime wedges
  • Sauce:
  • 8 oz sour cream
  • 1 package ranch dressing mix
  • 1 packet taco seasoning to taste
  • Milk, as needed to thin
Directions

Combine sauce ingredients, adding as much taco seasoning as you like. Thin the sauce if needed with milk to your desired consistency.

Spread each tortilla with about one tablespoon of sauce. Add coleslaw greens, shredded cheese, tomato, avocado, and olives. Top with cooked shrimp and serve with lime wedges. 

Buffalo Shrimp Tacos

Ingredients
  • 1 18 oz package SeaPak Popcorn Shrimp
  • 2 tablespoons butter, salted
  • ½ cup Buffalo Sauce
  • ¼ cup light ranch dressing
  • 8 small corn tortillas 
  • 1 cup shredded red cabbage
  • ½ cup chopped cilantro
  • ½ cup shredded lettuce
  • ½ cup diced red onion
  • ¼ cup crumbled blue cheese
  • ½ cup light sour cream
Directions

Heat oven to 450 degrees. Bake shrimp per package instructions, turning once during cooking. As the shrimp is cooking, heat butter, Buffalo sauce, and ranch together until butter is melted and mixture is smooth. Simmer while shrimp cooks. Once the shrimp is finished, toss the hot shrimp into the saucepan and stir gently until all the shrimp are evenly coated in the sauce.

Assemble tacos by placing about seven shrimp on each tortilla and top with your favorite combination of cabbage, cilantro, lettuce, onion, and blue cheese. Finish with a drizzle of sour cream and serve.
