3 Quick and Easy Tex-Mex Recipes

If you’ve ever eaten a fajita or nachos, then you’ve enjoyed Tex Mex. Tex Mex features a combination of cuisine from the indigenous peoples, American settlers, and native Mexicans who inhabited the area we now know as Texas. 

You don’t have to go to a restaurant to enjoy your favorite Tex Mex recipes. You may even have the ingredients for some of these classics in your pantry!

  1. Tex Mex Chicken Recipes

It’s hard to beat the ease of one-pan recipes. If you’re in the mood for chicken, try this simple, saucy recipe.

  • 3-4 chicken breast halves
  • 1 tsp ground cumin
  • 1/4-1/2 tsp cayenne pepper (to taste)
  • Salt and pepper to taste
  • 1 tbs oil
  • 1 cup frozen, fresh, or canned corn
  • 1 cup homemade or store-bought salsa
  • 1 cup cheese (pepper jack or Mexican blend)
  • 1/8-1/4 cup pickled jalapeno slices (to taste)
  • Sour cream
  1. With a rolling pin, work chicken to 1/2 inch thick. Add seasonings to both sides.
  2. Add oil to medium heat pan. Once the oil is hot, cook chicken on both sides until no longer pink (about 4-6 minutes per side).
  3. Once cooked through, add corn, salsa, cheese, and jalapenos. Cover pan and cook for 3-5 minutes. 
  4. Serve each chicken breast with a spoonful of sour cream.

  1. Tex Mex Chili Recipes

A great feature of Tex Mex recipes is the ability to make it your own. For a twist on the classic enchilada, try this chili cheese enchilada recipe. 

  • 3 tbs all-purpose flour
  • 3 tbs canola oil
  • 3 tbs chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbs tomato paste
  • 2 1/4 cups chicken broth 
  • Corn tortillas
  • Shredded cheese (colby jack, cheddar, Mexican blend)
  • Thinly sliced red onion
  • Sour cream
  1. Preheat oven to 425 degrees.
  2. Create a roux by cooking oil and flour in a large skillet over medium heat. Whisk constantly for two minutes or until light brown. 
  3. Add seasonings (chili powder, cumin, garlic powder, salt) and tomato paste. Cook while whisking for 30 seconds. 
  4. Stir in broth until smooth. Boil until sauce is thick (about two minutes).
  5. Pour 1/2 cup of source into a 9x13in dish.
  6. Dip tortilla into sauce and add about 1/4 cup of cheese into the tortilla. Roll up and place seam side down into the prepared dish. Once the dish is full, pour the remaining sauce over the top and cover with cheese. 
  7. Bake for about 12-15 minutes. Take out of the oven and top with onion slices and sour cream.

  1. Tex Mex Ground Beef Recipes

When it comes to cooking, there’s nothing easier than nachos. With the ability to make it your own, the nacho possibilities are endless. 

  • 1 pound ground beef
  • 1 onion, diced
  • 1 can of refried beans (16 ounces)
  • 16 ounces of jarred or homemade salsa
  • 2 tbs chili powder
  • 1 tbs cumin
  • 1 tsp paprika
  • Chopped olives
  • Shredded cheese (cheddar, pepper jack, Mexican blend)
  • Salt and pepper (to taste)
  • Chopped green onions 
  1. Cook beef and diced onions in a large skillet over medium heat until cooked through. Drain off excess liquid.
  2. Add seasonings, beans, and salsa. Cook until warmed through.
  3. Serve with tortilla chips and add any other toppings you’d like!
  4. Enjoy!
